
Why Sparkling Wine?
Steve produced Bubbler and it was the first Wisconsin grown grape sparkling wine. Steve’s inspiration
for producing Bubbler came from a French wine maker from Champagne France that he met at a
conference in 2012. Steve was complaining about the challenges of our cool summers here in
Wisconsin, wishing that we had the same perfect growing conditions that they had in world
famous wine regions like France. The French Winemaker started to laugh and said, “Steve, you
don’t understand, you my friend have warmer summers than I do in Champagne.” In the wine
world, cool summers mean less ripeness, more acidity, less sugar. High acid and low sugar in
the grapes are the perfect conditions for sparkling wines. He said, “You know Steve, after
hundreds of years in Champagne, we learned that you don’t make wine, you grow it, and
Mother Nature is the boss. That is why we make sparkling wine in Champagne. After so many
years of these conditions we got good at this and now we are world famous for our sparkling
wines. Why don’t you try to make sparkling wines? “
So, with the cool summer and fall of 2013, we decided to make the first sparkling grape wine
from Wisconsin. Because it was Wisconsin from ‘the ground to the glass” we knew it had to
have a distinctly Wisconsin name. When Maria took the first sip, she said “How about
Bubbler?” Only people in Wisconsin know what a “bubbler” is.
Since then it has won many Double Gold and Best of Class Awards. Its success has led to the
creation of its sister wine, our rose’ sparkling wine called Sparkler. This is also a Wisconsin wine
from ground to glass and has won Double Golds and Best of Class Awards.
Bubbler with its crisp acidity pairs well with variety of foods from rich and creamy dishes like
risotto and pasta, to salty and savory dishes like charcuterie and cheese platters, to spicy foods.
So don’t just save this wine for special occasions, it is perfect for everyday drinking!
