Made from 100% Estate Grown St. Pepin. The grapes for this wine were picked under the harvest moon of October 2021 after ripening to sweet perfection on the vines. Leaving these grapes on the vines later in the fall creates concentrated sugars that result in an intense multi layered wine.
After pressing these concentrated grapes, Steve halted fermentation early so as to hold in the sweet aromatics and layered flavors of the late fall warmth of 2021.
