Wisconsin is one of the few places in the world where authentic ice wine can be grown and produced. This is the fourth Ice Wine vintage released by Parallel 44.
These St. Pepin grapes were picked only after the grapes have frozen solid on the vine. The gapes were then pressed whiled still frozen, extracting very concentrated sugars and acids, while the water of the grape stays behind as frozen ice.
This is a specialty wine requiring labor and car, with very limited yeilds. What is pressed ins only a fraction of what would have been harvested had these grapes been picked for typical harvest.
This sweet, intense, full-bodied dessert wine is bursting with layers of lingering flavors which include: apricot, apple, and brown sugar. Serving temperature is critical and this wine should be between 40-45 degrees F. Pares well with most desserts such as cheesecake, chocolate cake, and fruit-based desserts or enjoy on its own.
