
Something Brand New Is Coming!
We get asked often, “Any new wines coming out this year?” The answer is yes!
For the very first time, we have hand crafted a new wine called Ice Cider, also known as Cidre de Glace. It is the equivalent of ice wine but is made from the frozen juice of apples instead of grapes.
As you know we typically make ice wine every second or third year. This past December the deer got to the grapes before Mother Nature could freeze them first. So when this happened our thoughts turned to one of the first wines we ever tasted called Neige which is probably the most famous wine from Quebec, Canada. It was one of the wines that put Steve on his trajectory as a winemaker.
This past January we brought in pressed apple juice from Macintosh and Cortland apples grown a few miles from Door 44. This pressed juice was then placed outside when the temperatures plummeted to 13 below zero. This period of subzero temperatures froze the water content of 2000 gallons of juice down to 400 gallons of intensely flavored and concentrated apple juice. It was fermented for the next 30 days. We are bottling it this week so it will be available for the first time ever next Saturday, June 21st. It will be special, and like ice wine, should be served around 40 to 45 degrees, the perfect dessert wine to enjoy on these warm summer days.
It tastes like apples, apricot, and candied lemon!
Heads up !!!
The introduction of Ice Cider means we only have 36 bottles of our current Ice Wine left! This will probably mean this is the last weekend you will be able to get Ice Wine for the next year or two, so make sure to come in and savor the last few remaining bottles of the Award Winning Ice Wine of 2022.
